I've setup a new browser for viewing images but the Preview module stays blank and isn't updating. I logged out of OS X and logged back in the see if that fixes it but it doesn't.

I've switched to the the default browser and I come to the conclusion that I might be missing something here. The preview doesn't display jpg's and png's, right?

The Preview pane can indeed preview image formats. Have you tried using Window > Modules > Preview or to embed it on a Drawer (View > Left/Right Drawer)? I suppose you can preview them with Quick Look, right (just to be sure)?

I tried everything – only Quick Look worked but no Path Finder previews.

But by mentioning Quick Look you pointed me in the right direction:

I flipped through my image related Quick Look plugins and deactivated them one by one »»» PngUncrush.qlgenerator was the culprit.
