I have some applescripts that start with a directory selected in finder. When I "Remove from Dock" finder I can not 'open' a finder window to select a directory. So my question is How do I open a finder window once I have removed finder from the dock

There are menu bar apps and dock apps. Finder is a dock app which means in order for you to use it, it needs its dock icon to be visible.

Search somewhere in System/Library/CoreServices for Finder.app and add it to Path Finder's toolbar to easily launch it.
